Bruschetta (pronounced broo-SKEH-tah() is an Italian traditional appetizer consisting of toast bread with fresh ingredients, most often tomatoes and herbs. The toppings are not usually cooked, even though the bread has been toasted. In our version, we warm up the toppings in the oven to make it a great party appetizer for a girls’ night or holiday soirée.
Ingredients for Feta Bruschetta
- French Bread Slices Cut the French bread into 1-inch thick slices. They’ll be thick enough for the toppings to stay in place without becoming limp but thin enough so that they can still be eaten as a snack. With these delicious toppings you can use store bought or day old bread.
- Butter and olive oils: The bread will be extra crispy and golden on both sides with this dynamic duo. This is the key to magic. Toast never tasted so good.
- Feta cheese: This recipe is a feta-based one. It’s salty, crumbly, and sharp. Buy a block in brine, and then crumble the feta yourself for best results. In a hurry, crumbled feta will do!
- Garlic cloves Freshly minced garlic gives a flavorful punch to the sweet tomato and creamy cheese. The fresh cloves are more flavorful, but you can also use “jar-lic”, which is minced garlic in a jar.
- Basil, fresh or dried: This bruschetta is best served with fresh basil, although dried basil will work in an emergency. Use 1 teaspoon dried herb for every 3 tablespoons fresh.
- Vinegar of red wine The vinegar adds acidity to the dish, which cuts the cheese flavors while bringing out the sweetness in the tomatoes.
- Tomato: The best tomatoes for bruschetta are Roma or Plum. The tomatoes are firm, not overly juicy and prevent the bread from becoming mushy.

First, brush and bake your bread
Pre-heat oven to 350degF. Combine butter and oil in a small dish and use it to brush both sides of the bread. Put the bread slices onto a baking tray. The slices should be baked until the tops are lightly browned, about 8-10 minutes.
Editor’s Tip: Watch the toasts. If you wait too long, your toast will turn croutons.
Step 2: Prepare your feta mix
Mix the garlic, red wine vinegar and salt with the feta, basil and basil. Spread the mixture on the toasts, then top with tomatoes.
The bruschetta is then baked again
The bruschetta should be baked for 8-10 minutes more or until heated. They should be served warm.
Editor’s Tip: If you want a traditional version, do not return toast with tomato and feta mix to the oven. Serve the bruschetta with the toppings on the toast. Toasting the bread will slightly warm up the toppings.

Feta Bruschetta Variations
- Balsamic glaze can be added to any dish. Sprinkle a bit over top right before serving to create a sweet and tangy flavor that pairs so well with salty feta. The glaze can be bought at the grocery store, or you can make it yourself by reducing and simmering a cup vinegar with one tablespoon of sugar. For a richer flavor, you can use balsamic vinegar instead of red wine.
- You can use sun-dried or roasted tomatoes. Try roasting cherry tomatoes in half with salt, pepper, and olive oil instead of using fresh tomatoes. Use sun-dried tomato straight out of the jar to add extra umami.
- You can also try it with whipped Feta: Blend feta cheese with Greek yogurt or cream cheese to create a spread you can use on toasts instead of crumbles. Try adding a dollop or two of the whipped feta.

Once assembled, the bruschetta will soften very quickly. The feta and tomatoes can be stored in an airtight container in the refrigerator. Wrap the bread tightly and store it at room temperature.

- Minced 2 or 3 cloves of garlic

- One large tomato seeded, chopped and sliced
